none of the ingredients are measured--that's the beauty of this soup. Just throw in what you've got.
Chunks of fresh pumpkin or squash (butternut or Atlantic Giant is best, jack-o-lantern chunks work fine too)
A few tomatoes
Corn (frozen or fresh)
Red or yellow peppers
Carrots
Water or vegetable soup stock (I *love* Trader Joe's Corn/Pepper Soup Stock)
Cream, half-and-half, or milk (optional)
you can blend this. Or not.
Add more corn and chunks of pepper if you want. Season with basil, cilantro, thyme, and/or a touch of cayenne. Serve it to people who've just come indoors on a rainy night.
It's awesome with sourdough bread, and tastes best on the 2nd and 3rd day.
